North Americans influence

There has been a change in the North American palate.

U.S. consumers now want more zip in their foods. Spicy foods with hot peppers / chilies, are becoming popular in mainstream diets.

Hot pepper consumption in the US has increased over 200% since 1983.

Trends –

A host of cookbooks and food magazines with a hot and fiery theme have increased in number and are readily available.

Food Shows and Expos with themes of ethnic and fusion foods have increased using spices and chili peppers from the Caribbean.

Growth of ethnic and traditional restaurants serving strongly flavored foods using spices and chili peppers from the Caribbean.

- Health

Chilies are an excellent source of vitamins A and C, some fresh hot chilies contain 4 times as much vitamin C per 100g as an orange.


Good source of folic acid, potassium, and trace metals.


Decreasing heart attacks, averting obesity, decreasing blood clots, acting against arthritic pain, sinus congestion, and protecting against stomach ulcers.

Snack trend

Consumers are getting braver, and are expecting stronger, more exotic snacks.

Chili-pepper-flavored snack are evolving into a line of snacks with hot flavors.

Consumers are looking for "sweet and heat."

FORECAST

Demand for pepper in all forms will increase.


South American/Caribbean cuisine with its variety of peppers and meats will remain the No. 1 ethnic region.


Global cuisines, particularly Caribbean will continue to drive new foods and flavor trend using pepper.
